Here is our recipe for a simplified version of a French classic, Garden Pea Soup. In a good sized saucepan heat some butter over a low flame and stir in a bag of frozen peas. Stir for 5 minutes until the peas are thawed and plump. Cover with water, salt, and bring to a boil on high heat. Reduce heat to a simmer for 15 minutes.
Blitz in a blender then serve with a generous serving of thick cream topped off with some mint leaves.
